What Is a Stacker Door, and How Does It Differ From a Slider?
A standard sliding door has two panels on two tracks. One slides, one is fixed, and the sliding panel parks behind the fixed one. A stacker sliding door adds panels and tracks, so two or three sliding panels collect together behind a single fixed panel rather than stopping one behind the other. That is the whole difference, and it is why stacker doors open wider than a slider of the same width.
A bifold is a different mechanism again. Its panels are hinged to each other and run on a single track, so they concertina and fold back against the reveal instead of sliding past one another. More of the opening clears, but the folded panels have to go somewhere.

The systems do not start from the same place. A bifold has more meeting stiles and a longer run of perimeter seal than a slider covering the same width, so there are simply more junctions for wind driven water to find. Sliders and stackers rely on interlocking stiles, which is a more forgiving detail.
The sill choice matters just as much. A flush, low profile threshold is far better for accessibility and looks cleaner, but it is harder to seal, and it depends on a properly drained track to work.
